LEAD: The Weintraub Entertainment Group and ABC News said they would pool their news film archives into a single library. The joint venture, called ABC/ Weintraub Pathe, will use the film archives to develop new programming for home video cassettes and cable television, the companies said. They declined to disclose specific applications or terms of the deal.

LEAD: The Southland Corporation, which is in the middle of a $4.9 billion leveraged buyout by the company's founding Thompson family, said that it would postpone its Nov. 5 shareholder meeting until Nov. 12. The Dallas company, which owns the 7-Eleven convenience store chain, said that the meeting had been delayed ''to provide time to complete the sale of the $1.5 billion of subordinated debt necessary to finance the merger.

LEAD: The Plessey Company said it planned to acquire Sippican Inc., a maker of oceanographic products based in Marion, Mass., for about $80 million. Plessey, an electronics company based in Ilford, near London, described Sippican as a leader in the construction of antisubmarine equipment. It said it had agreed to pay $18.50 for each Sippican share.
